Mrs Jones gave birth to a baby boy named Nate Jones on New Year's Day at 1am, weighing 'dead on' 4kg.
The New Year's Eve fireworks display was on the television as Mrs Jones was giving birth, with the couple taking bets on whether Nate would be born in 2021 or 2022.
Mrs Jones said Nate was initially due on December 21.
However, held on until after Christmas.
The mission was to make it past Christmas lunch.
"We were looking at Christmas because we thought it would be a few days over. Christmas came and went and then Boxing Day," she said.
"I was meant to be induced before New Year's Eve but ended up going into labour myself, and that took so long it ended up clicking over to the next day."
The couple elected not to know the gender of the baby until he was born.
With the birth of Nate, the couple's two-and-a-half-year-old daughter Ayla now has a younger brother.
So far, Mrs Jones said Alya has been a great old sister to her new brother.

"She was quite oblivious throughout the pregnancy, but then she took to him straight away," she said.
"Every morning she wakes up and asks "Where's baby?" and has to come and check that he is still here.
"She has been a great big sister so far. He hasn't cried much yet so she might act differently when he starts crying a lot."
Mrs Jones thanked the team at the Wimmera Base Hospital, who worked away into the hot evening to make sure the birth went as smooth as possible.
